Ingredients
- 4 slices bacon
- 1 clove garlic, minced
- 1 yellow onion, diced
- 2 tsp everything bagel seasoning
- salt and black pepper to taste
- ⅛ to ¼ red pepper flakes – (optional)
- 16 ounces frozen baby lima beans
- 1 ½ cups chicken broth or stock
Instructions
- Preheat oven to 425 degrees, and lay out four bacon strips on a baking sheet lined with aluminum foil.
- Bake bacon for 20-25 minutes, until crispy. Then, pour the bacon grease from the foil into a large pot. Break up the bacon into bits and set aside.
- To the pot with the bacon grease, add in garlic, onion, and spices, and sauté for about 3 minutes, until fragrant and the onions are beginning to soften.
- Then add in lima beans and broth. Cover the pot and bring to a boil. Reduce heat to medium-low to simmer.
- Cook for 30 minutes, stirring periodically. If needed, add water or more broth. You do not need a lot of liquid, but you don’t want them to burn. So add if necessary. Season with salt if desired.
- Cook for another 30 minutes until buttery tender, top with the crumbled bacon bits, and enjoy.
